Vegetarian Thai Green Curry Recipe

Here's a wonderful recipes of Veg Thai Green Curry with vegetables. Prepare Thai Green Curry paste in advance and make this curry on the go for a quick weeknight dinner and serve it along with hot steamed rice or a fried rice.


The Vegetarian Thai Green Curry is close to authentic Thai made from home made Thai green curry paste with the vibrant fresh hot chilli peppers and green coriander leaves, ground with lemon grass, I like to load it with the choicest vegetables making it simply delectable and spicy.

I personally like the curry being green, hence I grind some fresh coriander leaves or even Italian parsley, to give it a burst of emerald colour.

The choice of vegetables for the curry is solely your choice and taste. You can make your choices from the following combinations. The list can be so imaginative, that I purely like to play with colours when I add my vegetables to the curry. So go ahead with yours.

Ingredients
    For Thai Green Curry Paste
  • 5 Stalks Lemongrass
  • Green Chillies , chopped
  • 1/4 cup Coriander (Dhania) Leaves , chopped
  • 3 sprig Basil leaves
  • 1 tablespoon Coriander (Dhania) Seeds , whole roasted
  • 1 teaspoon Cumin seeds (Jeera) , roasted
  • 1 teaspoon Whole Black Peppercorns
  • Onion , roughly chopped
  • 1/4 cup Spring Onion (Bulb & Greens) , roughly chopped
  • 3 cloves Garlic
  • 1 inch Ginger
  • Salt , to taste
  • For Thai Green Curry
  • 400 ml Coconut milk , unsweetened
  • 3 tablespoons Thai Green Curry paste
  • 1 cup Broccoli , florets
  • Carrot (Gajjar) , sliced
  • Red Yellow or Green Bell Pepper (Capsicum) , diced
  • 1/2 Green zucchini , quartered or thickly sliced
  • 1 cup Water , or vegetable stock
  • 1 tablespoon Brown Sugar (Demerara Sugar)
  • 1 sprig Basil leaves , or kaffir lime leaves
  • Salt , to taste
  • 1 teaspoon Oil

Directions for Vegetarian Thai Green Curry Recipe

  1. To begin making the Vegetarian Thai Green Curry recipe, we will first make the Thai Curry paste.

  2. To do that, we will first have to prepare the lemongrass.  We will first have to trim away and discard any root section below the bulb base. We will also now remove the dried part of the root until we reach a stage we know that the root cuts easily and is tender. 

  3. We don't use the leaf part of the lemon grass for the curry paste, you can use it for flavouring a tea or a soup.

  4. Continue the same procedure for the remaining lemon grass stalks.

  5. Add all the ingredients for the paste into a blender and a little bit of water. Cover the blender and grind the mixture to make a smooth paste.

  6. After a few seconds of grinding, open the blender and stir to combine the rest of the ingredients that are required to make the paste - green chillies, coriander leaves, basil leaves, coriander seeds, cumin seeds, peppercorns, onions, spring onions, garlic, ginger and salt.

  7. If required add a little more water to grind into a smooth paste.

  8. Transfer the Thai curry paste and store it in a glass jar. You only need to use 3 tablespoons of the paste for a single recipe of Thai curry. So with this paste you will be able to make Thai curry at least 3 times over.

Method to make the Thai Green Curry
  1. Next we will proceed to make the Vegetarian Thai Curry with this paste. Heat a teaspoon of oil in a heavy wok. Add in the vegetables like carrots, zucchini, broccoli and bell peppers.

  2. Add in some salt and stir fry the vegetables on high heat until lightly tender. Once tender turn off the heat and keep aside.

  3. Add a teaspoon of oil into the hot wok, next add in 2 to 3 tablespoons of the Thai curry paste and saute for a few seconds in the oil.

  4. Next add in a cup of water and stir to combine into the curry. Next we will add in a tablespoon of brown sugar and finally 400 ml of the coconut milk.

  5. Stir to combine all the ingredients. Once combined, add in the salt, stir and allow the mixture to thicken a little and come to a boil. 

  6. Once the mixture comes to a boil, add in some torn basil leaves and the stir fried vegetables. Stir the mixture, give it a light boil and the Vegetarian Thai curry is ready to be served.

  7. Serve the Vegetarian Thai Green Curry Recipe with a bowl of Steamed Rice or Jasmine Rice to enjoy your Thai style Meal.

Thai red curry recipe

This Thai red curry recipe is so easy to make at home! It’s much tastier than takeout and healthier, too. Feel free to change up the vegetables (you’ll need about 3 cups total) and skip the kale if you want a more traditional Thai curry. This recipe is vegetarian, vegan and gluten free for all to enjoy. Recipe yields 4 servings.





INGREDIENTS

  • 1 ¼ cups brown jasmine rice or long-grain brown rice, rinsed
  • 1 tablespoon coconut oil or olive oil
  • 1 small white onion, chopped (about 1 cup)
  • Pinch of salt, more to taste
  • 1 tablespoon finely grated fresh ginger (about a 1-inch nub of ginger)
  • 2 cloves garlic, pressed or minced
  • 1 red bell pepper, sliced into thin 2-inch long strips
  • 1 yellow, orange or green bell pepper, sliced into thin 2-inch long strips
  • 3 carrots, peeled and sliced on the diagonal into ¼-inch thick rounds (about 1 cup)
  • 2 tablespoons Thai red curry paste*
  • 1 can (14 ounces) regular coconut milk**
  • ½ cup water
  • 1 ½ cups packed thinly sliced kale (tough ribs removed first), preferably the Tuscan/lacinato/dinosaur variety
  • 1 ½ teaspoons coconut sugar or turbinado (raw) sugar or brown sugar
  • 1 tablespoon tamari or soy sauce***
  • 2 teaspoons rice vinegar or fresh lime juice
  • Garnishes/sides: handful of chopped fresh basil or cilantro, optional red pepper flakes, optional sriracha or chili garlic sauce

INSTRUCTIONS

  1. To cook the rice, bring a large pot of water to boil. Add the rinsed rice and continue boiling for 30 minutes, reducing heat as necessary to prevent overflow. Remove from heat, drain the rice and return the rice to pot. Cover and let the rice rest for 10 minutes or longer, until you’re ready to serve. Just before serving, season the rice to taste with salt and fluff it with a fork.
  2. To make the curry, warm a large skillet with deep sides over medium heat. Once it’s hot, add the oil. Add the onion and a sprinkle of salt and cook, stirring often, until the onion has softened and is turning translucent, about 5 minutes. Add the ginger and garlic and cook until fragrant, about 30 seconds, while stirring continuously.
  3. Add the bell peppers and carrots. Cook until the bell peppers are fork-tender, 3 to 5 more minutes, stirring occasionally. Then add the curry paste and cook, stirring often, for 2 minutes.
  4. Add the coconut milk, water, kale and sugar, and stir to combine. Bring the mixture to a simmer over medium heat. Reduce heat as necessary to maintain a gentle simmer and cook until the peppers, carrots and kale have softened to your liking, about 5 to 10 minutes, stirring occasionally.
  5. Remove the pot from the heat and season with tamari and rice vinegar. Add salt (I added ¼ teaspoon for optimal flavor), to taste. If the curry needs a little more punch, add ½ teaspoon more tamari, or for more acidity, add ½ teaspoon more rice vinegar. Divide rice and curry into bowls and garnish with chopped cilantro and a sprinkle of red pepper flakes, if you’d like. If you love spicy curries, serve with sriracha or chili garlic sauce on the side

New Delhi: With the coronavirus situation spiralling out of control, several states reimposed lockdown-like restrictions in some of their cities and districts to combat the further spread of the contagious virus, which has killed nearly 1,70,000 people. Notably, the country on Sunday recorded the highest single-day surge since the onset of the coronavirus pandemic. A total of 1,52,879 fresh cases were detected in the last 24 hours, taking the active COVID-19 cases to 11,08,087. Maharashtra remains the worst-hit state by coronavirus as its tally has crossed the 33-lakh mark. Continuing in the 50,000 range, the state reported 55,411 new Covid cases on Saturday, down from 58,993 on Friday. Maharashtra: After an all-party review meeting, Chief Minister Uddhav Thackeray warned that "there is no alternative to a complete lockdown" and said that a decision on this would be announced in a day or so. The Chief Minister asserted that if state-wide lockdown will be reimposed, all issues of poor, labourers and daily-wagers will be addressed. "It will be ensured that the poor and the working class people won't suffer while imposing strict restrictions," Thackeray said, hinting at implementing tough curbs. Delhi: The Arvind Kejriwal-led Delhi government late on Saturday night issued fresh guidelines, prohibiting all social, political, sports, entertainment, cultural and religious gatherings till further order. According to the new guidelines issued by the Delhi Disaster Management Authority (DDMA), all cinemas, theatres and multiplexes will be permitted to open with up to 50 per cent of their seating capacity.


The guidelines also said that swimming pools in Delhi will remain closed, except for training of sportspersons participating in national/global events. Delhi Metro and DTC and cluster buses will run with 50 per cent of their capacity, the order stated.

The guidelines also added that marriage-related gatherings will allowed with the participation of up to 50 persons. Restaurants and bars will be allowed with up to 50 per cent of their seating capacity. The authorities added that colleges and coaching institutions will remain closed in Delhi in view of the rising the number of Covid-19 cases.


Uttar Pradesh: The Yogi Adityanath government in Uttar Pradesh has announced night curfew in Meerut, Ghaziabad, Noida, Varanasi, Kanpur, Prayagraj and Bareilly districts to break the chain of transmission. Besides, it has decided to prohibit the entry of more than five persons at a time in all religious places. The Chief Minister imposed fresh restrictions by capping the number of devotees entering a religious place at a time. The move is significant considering that the festival of 'Navratri' is scheduled to begin on Tuesday and the month of Ramzan will commence from Wednesday. Directions have also been issued to limit the number of staff in the government and private offices to 50 per cent of the total capacity.

Madhya Pradesh: The Madhya Pradesh government has extended the weekend lockdown across 11 districts. Lockdown will be extended till April 19 in Barwani, Rajgad, Vidisha, Indore city, Rau Nagar, and Mahu Nagar, Shajapur and Ujjain. Besides, a 10-day lockdown will be reimposed in Balaghat, Narsinghpur, Seoni Jabalpur from April 12. Earlier, the government had announced lockdown for eight-day in Chhindwara. A 6-day lockdown has been reimposed in Betul Khargone, Ratlam and Katni from the night of April 9.

Karnataka: A 10-day corona (night) curfew has been imposed in 7 districts of Karnataka including Bengaluru, Mysuru, Mangaluru, Kalaburagi, Bidar, Tumkuru, Udupi and Manipal between 10 pm-5 am from April 10. The restrictions will remain in place till April 20. "As corona is spreading, we have taken this measure to control it. We are not imposing any lockdown", CM Yediyurappa had stated. He had asserted that if things don't come under control, the government may have to extend it (curfew) to the entire state.
